Ingredients

Salad:

  • ¾ pound Brussel Sprouts
  • ½ cup red onion (diced)
  • ½ cup bell pepper (red or orange, diced)
  • ¼ cup green onion (diced)
  • 1 tablespoon jalapeño pepper (or more depending on your preference) finely diced)
  • 6 slices bacon (crisp and crumbled)
  • ½ cup blueberries
  • ½ cup candied walnuts or pecans (may also sub toasted, sliced almonds in a pinch!)

Dressing:

  • ½ cup olive oil
  • 2 teaspoons Dijon mustard
