Dr. Stephen Phinney and Dr. Jeff Volek on the Basic Science of Ketosis and Keto-Adaptation
Two of our co-founders, Dr. Stephen Phinney and Dr. Jeff Volek, worked with The Ohio State University’s Food Innovation Center to convene a group of esteemed scientists and researchers to discuss recent progress in the science of low carbohydrate nutrition. This symposium was hosted by the OSU Food Innovation Center and the video recordings were sponsored by Virta Health. OSU and Virta have made these videos free and available to the public.
Dr. Stephen Phinney and Dr. Jeff Volek co-authored several books, including The Art and Science of Low Carbohydrate Living and The Art and Science of Low Carbohydrate Performance, two foundational books on low carb nutrition science and nutritional ketosis.Watch their presentation here:

Speakers at the conference discussed the molecular functions of ketones, treatment strategies for diabetes, cancer, metabolic, heart, and brain disorders, public policy and healthcare guidelines, the practical role of ketosis in sports, and more.
About the speakers
Stephen Phinney, MD, Ph.D is the Chief Medical Officer and Co-Founder of Virta Health. He's a physician-scientist years who has spent decades studying nutritional biochemistry, particularly low carbohydrate research and how it affects insulin sensitivity. He's published 87 peer-reviewed papers and book chapters on clinical nutrition and biochemistry. Dr. Dr. Phinney received his MD from Stanford University and his Ph.D in nutritional biochemistry and metabolism from the Massachusetts Institute of Technology. He completed post-doctoral research at Harvard University.
Jeff Volek is the Chief Science Officer and Co-Founder of Virta Health. Dr. Volek is a researcher who studies clinical and performance applications of nutritional ketosis. He has published more than 300 peer-reviewed scientific manuscripts and five books, including a New York Times Best Seller, and he has provided more than 200 lectures at scientific and industry conferences around the world. Dr. Volek is a professor in the Department of Human Sciences at The Ohio State University. Dr. Volek has a Bachelor of Science in dietetics from Michigan State University, and a Master of Science in exercise physiology and Doctorate in kinesiology and nutrition from Pennsylvania State University.
