  • 1 head cauliflower (5-6" dia, ~4 cups)
  • ½ medium onion (chopped (~½ cup)
  • 1 green bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon Tony Chachere’s Cajun seasoning (or other seasoned salt)
  • 16 oz ground beef (can sub any ground meat)
  • 1 tablespoon olive oil

Instructions

  1. Rice the cauliflower raw (or buy rice cauliflower).
  2. Saute onions and green pepper in a large pan with lid until clear and soft. Transfer to bowl and set aside.
  3. In the same pan, brown ground meat until fully cooked and chopped fine. A higher fat content meat works best, but you can add oil if using too lean of a cut.
  4. Return the onion and peppers to the pan and add minced garlic.
  5. Add ½ cup of water to mix and moisten the mixture.
  6. Add cauliflower and season with cajun seasonings. Mix well.
  7. Cover pan and leave on low heat until cauliflower is soft. Stir occasionally. If mixture seems to dry, add additional water and raise temperature to steam the cauliflower.
