  • 1 pound beef fillet
  • 10 sprigs fresh thyme (finely chopped)
  • salt & pepper to taste
  • 3 tablespoons olive oil
  • ½ small red onion (thinly sliced)
  • 1 handful Italian flat leaf parsley (roughly chopped)
  • 1 tablespoon Dijon mustard
  • ½ lemon (juiced)
  • 4 tablespoons extra-virgin olive oil
  • 2 tablespoons capers (roughly chopped)
  • 1 cup parmesan shavings
  • 1 handful arugula

Instructions

  1. Season the beef with the thyme and lots of salt and pepper.
  2. Heat a heavy-based pan on the stove with the olive oil until it is smoking hot (can also be done on a scorching hot grill).
  3. Sear the beef in the pan for no longer than two minutes, just until it has color all around it and then remove it from the pan.
  4. Slice the fillet as thinly as you can with a sharp knife.
  5. Place each slice on your chopping board and flatten with the flat side of your knife, then lay each slice on a platter.
  6. Mix the sliced onion, parsley, mustard, lemon juice, olive oil and capers together and spoon it over the sliced meat.
  7. Season well with salt and pepper.
  8. Garnish the dish by scattering with parmesan shavings and arugula (and another glug of olive oil if necessary).
