Ingredients

  • 3 tablespoons ghee (or Virta-friendly cooking oil)
  • 1 medium onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1 inch ginger (fresh, minced)
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • ½ teaspoon garam masala (store-bought (or homemade, recipe included)
  • ½ teaspoon ground cumin
  • ½ teaspoon cayenne pepper (optional)
  • 1 pound ground beef
  • 2 medium tomato (diced)
  • salt & pepper to taste
  • 1 cup green beans (cut to ½ – 1 inch length)
  • 2 teaspoons malt vinegar
  • ¼ cup fresh cilantro (chopped + extra leaves for garnish)
  • 1 wedge lemon (or lime (optional)

Hot Garam Masala (from website):

  • 3 large cinnamon stick (or 3 Tbsps cinnamon bark bits)
  • 3 tablespoons cloves (whole)
  • ¼ cup green cardamom pods (shelled and husks discarded (~2 Tbsps seeds)
  • 4 large black cardamom pods (shelled and husks discarded (~1 Tbsp seeds) (optional)

Instructions

Kheema:

  1. Warm ghee over medium-high heat in a large skillet.
  2. Add in onions & garlic and cook until golden.
  3. Toss in ginger and sauté for another 1-2 minutes.
  4. Add in coriander, paprika, garam masala, cumin, and cayenne (if desired) & cook for 1-2 minutes.
  5. Add in beef and use a spoon to separate the lumps.
  6. Sauté until the beef is no longer pink.
  7. Stir in tomatoes, ½ – 1 cup water, and generously season with salt & pepper.
  8. Add the chopped green beans.
  9. Stir well and simmer, partially covered, for about 10 minutes.
  10. Add in vinegar and chopped cilantro..
  11. Garnish with cilantro leaves and fresh lemon or lime juice may be added prior to serving.

Hot Garam Masala:

  1. Combine all ingredients in a spice or coffee grinder.
  2. Grind until a fine consistency.
