Instructions
- Mince garlic and ginger.
- Dice onions, green pepper, and tomatoes.
- Add olive oil, onion, garlic, ginger, green pepper, and tomato to a large pot.
- Sautée on medium-high heat for 7-10 minutes until onions become golden brown.
- Pour in spices and stir for 5-10 minutes on medium-high heat until a stew-like consistency is reached.
- Add chicken and stir for 3-4 minutes on medium-high heat until chicken is evenly coated with sauce.
- Pour in ¾ – 1 cup water until pot is half full.
- Stir 1-2 minutes to even out mixture.
- Turn down the heat to medium-low.
- Cover and let cook for 35-45 minutes, while stirring occasionally.
- Garnish with fresh cilantro prior to serving.
- While the chicken is cooking, add oil, cloves, and cinnamon to large skillet.
- Cook on medium heat for 2-3 minutes.
- Add cauliflower rice and mix for 3-4 minutes until even.
- Cover and cook on medium for 10-15 minutes until desired softness is reached.
