  • ½ onion (chopped)
  • 1 red bell pepper (chopped)

  • 1 zucchini (chopped)
  • 3 cups cauliflower rice
  • 1 cup green onion (sliced)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • fresh cilantro (for garnish)

Instructions

  1. Heat half the coconut oil in a hot wok.
  2. Pour the beaten eggs into the wok and cook for about a minute or until they’re the consistency of a lightly scrambled omelette. Carefully remove eggs from the wok and set aside.
  3. Wipe out the wok with paper towel and add the remaining coconut oil.
  4. Fry the ginger and garlic for about 1 minute. Add the onion, pepper, mushrooms and zucchini. Stir-fry everything until lightly browned and tender, about 2 minutes.
  5. Add the cauli-rice, egg, green onions, soy sauce and sesame oil.
  6. Stir fry everything together until heated through. Using a spatula, roughly chop the egg into smaller pieces as you stir.
  7. Garnish with fresh cilantro.
