- 1 tablespoon bacon fat
- 1 medium leeks (thinly sliced)
- 1 stalk celery (diced)
- 1 red bell pepper (diced)
- 1½ pound ground beef
- 3 garlic cloves (pressed or minced)
- 2 medium carrot (chopped into 2" pieces)
- 3 tablespoons tomato paste
- 2 tablespoons chicken broth (or water)
- 1½ tablespoon cajun seasoning (sugar-free)
- 1 pound cauliflower (riced (fresh or frozen)
- hot sauce (to taste, optional)

Instructions
- In a large skillet over medium-high heat, sauté leeks, celery and bell pepper in bacon fat for 5 minutes or until veggies begin to soften.
- Add in ground beef and, using a spatula, break up into smaller pieces as it cooks through.
- Add garlic, carrots, tomato paste and broth.
- Cover and cook for 5 minutes.
- Stir in seasonings, then stir in cauliflower rice.
- Cover, reduce heat, and cook for 5 to 7 minutes more or until cauliflower has softened but is not mushy.
- Serve topped with hot sauce if desired.
