- 4 sheets nori seaweed
- 1 pound cucumbers, thinly sliced (thinly sliced)

Instructions
- Prepare all ingredients and separate into four equal portions. Have a small bowl of water close by.
- On a dry cutting board, place a sheet of nori shiny side face down and long edge facing you.
- Starting from the left side, lay out cucumber slices in overlapping rows atop the nori sheet, leaving a 1-inch margin of uncovered nori on the right side.
- Sprinkle with sesame seeds and chili powder, if desired.
- If using tahini (optional), layer over the cucumber. If using salad green and/or sliced radishes, layer on top of spread and/or cucumber.
- Position the bulky fillings (i.e. avocado slices, tofu, bean sprouts, herbs, jicama) in a coordinated and vertical pattern 2 inches from the left edge.
- Rotate the cutting board so the uncovered section of nori is furthest from you. With both hands, start rolling the sheet of seaweed from the closest to you, folding it up and over the fillings, then rolling it tightly away from you.
- Before reaching the uncovered section of nori towards the end, dip your fingertips in water and dab the nori sheet lightly to make it stick.
- Set aside, seam side down.
- Repeat with remaining ingredients to make three more rolls.
- Slice into halves or thick slices using a sharp knife.
- Serve with soy sauce for dipping.
