Instructions
- Preheat oven to 350 degrees F.
- In a small bowl, combine crust ingredients - almond flour, butter and erythritol. The mixture should be crumbly and well incorporated.
- In a cupcake pan, add one heaping scoop of the crust mixture. Use the spoon to pack in the crust so it doesn't come apart; it will be a thin layer and yield about 10 bites.
- Place in the oven to bake for about 8 minutes, or until slightly golden and crunchy.
- While the crust is baking, combine the almond butter, liquid stevia, vanilla and butter - in a medium mixing bowl.
- Add in the eggs, one at a time, and stir to thoroughly combine.
- Add in the pecans. Stir until they are evenly coated.
- Remove the cupcake pan from the oven when done, and evenly distribute the filling to each crust.
- Bake for about 18-20 minutes. Remove from oven and allow to cool until ready to eat!
