Instructions
- Heat butter in a skillet over medium-high heat.
- Add ginger, garlic, cumin and chili pepper. Cook for 1-2 minutes.
- Add onion and saute until translucent.
- Add the zucchini, turmeric, chili powder and salt. Cook until zucchini is tender.
- Add the cottage cheese and cook until heated through. Remove from heat.
- Stir in lime juice and top with coriander leaves.
