Instructions
- Preheat the oven to 400 degrees. Peel the garlic cloves, and add them and the olive oil to a medium-heated, small saucepan. Once the oil starts to bubble, reduce the heat, and cook for 10-15 minutes until the garlic is golden. Stir every so often.
- When the oil looks like it has 5 minutes left, put your cast iron in the oven to heat. Pat the chicken dry and season with salt and pepper. Take the cast iron out when the garlic oil is done, put it on medium-high heat, and add 1 tbsp of the garlicky oil.
- Put the chicken on the cast iron skin side down and let it sizzle on the stove. Do not flip the chicken. After 5 minutes, put the cast iron in the oven for about 25 minutes, or until the chicken is 165 degrees. While the chicken is in the oven, cut the butter into small squares and keep them chilled, zest and juice the lemon, and cut up the herbs. Once the chicken is done, flip the it skin side up onto a serving plate and put the cast iron back on the stove at medium-high heat.
- Add the broth to the cast iron and bring it to a boil. Use your spatula to pick up the browned bits from the bottom of the pan and the broth has reduced by about a third.
- Whisk throughout this step. Add butter piece by piece and cook until the sauce takes on a golden color and seems to thicken. Once this occurs, add the lemon zest, juice, half the herbs, and the cooked garlic, and take it off of the heat. Sample the sauce and adjust salt to your taste. Pour out the sauce and let everyone decide how they want to eat it with their chicken.
