  • 4 cups cauliflower (riced (about 1 large head, frozen works well)
  • 4 eggs
  • 2 cups mozzarella cheese (or shredded cheese of choice)
  • 3 teaspoons oregano
  • 4 garlic cloves
  • salt & pepper to taste

Pizza toppings of choice (optional):

  • 3 teaspoons olive oil
  • 1 cup mozzarella cheese
  • ½ cup sliced olives
  • ½ cup green pepper (sliced)

Instructions

  1. Preheat oven to 425 degrees.
  2. Prepare 2 pizza dishes or one large baking sheet by lining with parchment paper.
  3. Heat the riced cauliflower in the microwave (in container with lid) for about 10 minutes.
  4. Take out, let cool, and make sure you have as much water out as you can (you may use a towel and twist to remove extra liquid).
  5. In a large bowl, add the cauliflower, eggs, 2 cups of cheese, oregano, garlic, and salt/pepper. Mix together.
  6. Separate mixture (if making two) and place on the pans you prepared. Pat our to desired thickness. (TIP: use thick for breadsticks and thin for pizza crust and/or flatbread).
  7. Make any shape or size you want!
  8. Bake the crust for about 25 minutes or until nice and golden.
  9. Once golden, add the pizza toppings and bake for another 5 minutes until cheese is melty.
