Instructions

  1. Preheat the oven to 350 degrees F.
  2. Line two baking trays with silicone baking paper.
  3. Melt the heavy cream and butter and add melted mixture to the bowl of a food processor with the cooked and drained cauliflower. Blend until fine. Remove from the food processor and place in a mixing bowl. Allow to cool completely.
  4. Once the cauliflower mixture has cooled, stir in the egg yolks, grated cheese and baking powder.
  5. Whisk the egg whites until stiff. Fold ¼ of the egg whites into the cauliflower mixture, followed by the rest.
  6. Using a round nozzle, fill a piping bag with the cauliflower mixture and pipe little tots onto the lined baking tray. Make them about 1 inch long leaving a little space between each one.
  7. Bake for 15-20 minutes until they golden.
  8. Serve immediately with low sugar ketchup or dipping sauce of choice.
