Instructions
- In a large saucepan, whisk eggs, yolks, erythritol and salt together.
- Slowly add almond milk and whisk until well combined.
- Cook mixture over low heat while stirring constantly until the mixture reaches a temperature of 170F, about 15-20 minutes
- Strain egg mixture into a large bowl
- Cover tightly with plastic wrap and chill for a minimum of three hours.
- Just before serving, whip cream into soft peaks
- Add 1 oz liqueur of choice to each glass and pour eggnog on top
