  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons lime juice
  • 6 garlic cloves (minced)
  • 2 teaspoons kosher salt
  • 2 teaspoons dried oregano
  • 1 teaspoon black pepper (freshly ground)

Instructions

  1. Using a paring knife, poke holes all over the pork.
  2. In a 6-quart slow cooker, add the onion and pork.
  3. In a medium bowl, combine the rest of the ingredients to make a sauce. Pour over the meat, massaging it into the holes.
  4. Place the lid on the slow cooker and cook on low for 8 hours, or on high for 4 hours. (If on high, turn the meat every hour or until until it’s tender and check that the thickest part reaches at least 145°F)
  5. Using forks, shred the meat and toss it with the sauce.
  6. Serve, or let cool for an hour and store in the fridge.
