Instructions
- Using a paring knife, poke holes all over the pork.
- In a 6-quart slow cooker, add the onion and pork.
- In a medium bowl, combine the rest of the ingredients to make a sauce. Pour over the meat, massaging it into the holes.
- Place the lid on the slow cooker and cook on low for 8 hours, or on high for 4 hours. (If on high, turn the meat every hour or until until it’s tender and check that the thickest part reaches at least 145°F)
- Using forks, shred the meat and toss it with the sauce.
- Serve, or let cool for an hour and store in the fridge.
