Instructions
- Combine 1 cup erythritol and 1 cup water in a medium saucepan to make sugar-free simple syrup: bring to a boil, reduce heat and simmer, stirring frequently, for 4-5 minutes until erythritol is dissolved. Cool completely before using.
- Combine the simple syrup, lemon juice, and remaining 2 ½ cups cold water in a pitcher. Taste and adjust sweetener as needed (you can also add water or lemon juice as needed).
- Pour over ice to serve.
