  • 4 slices bacon
  • 2 pounds cauliflower florets
  • 6 oz cream cheese (softened)
  • ½ cup sour cream
  • 4 oz cheddar cheese (sharp, shredded)
  • 4 oz pepper jack cheese (shredded)
  • 2 scallions(green tops, chopped)
  • 2 garlic cloves (minced)
  • salt & pepper to taste
  • 1 pinch crushed red pepper flakes

Instructions

  1. Preheat oven to 350 degrees F. Grease or spray a 2-quart baking dish.
  2. Cook bacon until crisp and set aside to cool. Once cool, crumble bacon.
  3. Steam cauliflower until tender.
  4. While cauliflower cooks, combine the cream cheese and sour cream in a mixer.
  5. Add 3 oz of the sharp cheddar and 3 oz of the pepper jack cheese, the bacon, scallions, garlic, salt, pepper, and red pepper flakes. Stir until combined.
  6. Drain cauliflower and add to the cream cheese mixture.
  7. Once well coated, you can partially mash a portion of the cauliflower but keep most whole for texture.
  8. Transfer to the baking dish and add the remaining cheese.
  9. Bake 30 minutes. If desired, put under the broiler for a couple of minutes to brown cheese.
