- 4 slices bacon
- 2 pounds cauliflower florets
- 6 oz cream cheese (softened)
- ½ cup sour cream
- 4 oz cheddar cheese (sharp, shredded)
- 4 oz pepper jack cheese (shredded)

- 2 garlic cloves (minced)
- salt & pepper to taste
- 1 pinch crushed red pepper flakes

Instructions
- Preheat oven to 350 degrees F. Grease or spray a 2-quart baking dish.
- Cook bacon until crisp and set aside to cool. Once cool, crumble bacon.
- Steam cauliflower until tender.
- While cauliflower cooks, combine the cream cheese and sour cream in a mixer.
- Add 3 oz of the sharp cheddar and 3 oz of the pepper jack cheese, the bacon, scallions, garlic, salt, pepper, and red pepper flakes. Stir until combined.
- Drain cauliflower and add to the cream cheese mixture.
- Once well coated, you can partially mash a portion of the cauliflower but keep most whole for texture.
- Transfer to the baking dish and add the remaining cheese.
- Bake 30 minutes. If desired, put under the broiler for a couple of minutes to brown cheese.
