Instructions
- Beef Mixture:
- Heat the olive oil in a large saucepan. Add the onion and garlic and sauté on medium heat until soft and translucent.
- Add the ground beef and cook, stirring frequently, until it is browned and cooked through.
- Add the celery, mushrooms, and crushed tomatoes and stir to combine. Reduce the heat to a simmer. Simmer uncovered for 10 minutes.
- Cauliflower Topping:
- In a large microwave safe bowl, add ¼ cup water and the cauliflower florets. Cover with plastic/saran wrap and cook on high for 8-10 minutes.
- Drain the cauliflower, allowing steam to escape. Dry cauliflower will help make a creamier mash.
- Transfer the drained cauliflower to a food processor. Add the butter, cream, shredded cheese, salt, and pepper. Process until smooth.
- To Assemble:
- Place the ground beef mixture in the bottom of a large casserole dish.
- Top with the mashed cauliflower.
- Bake at 350℉ for 25 minutes or until the filling is bubbly and the topping is browned.
