- 1 cup celery (diced)
- ½ onion diced onion
- 2 garlic cloves (minced)
- 1 teaspoon dried sage
- ½ teaspoon kosher salt

- ½ cup chicken broth
- 2 eggs
- ¼ cup heavy cream

Instructions
- Prepare the skillet bread 1-2 days in advance and cut into cubes. Preheat oven to 200 degrees.
- Spread bread on a large baking sheet and bake 2 to 3 hours to dry out and crisp up. Let sit overnight to continue the drying process.
- Cook sausage in a heated skillet, breaking up pieces until just cooked through, about 6 minutes.
- Drain sausage and place in a large bowl.
- Add celery, onion, garlic, sage, salt, and pepper to skillet and saute until tender. Add to sausage.
- Preheat oven to 350 degrees and grease a 13×9 glass baking dish.
- Combine bread and sausage mixture. Add chicken broth and stir to combine.
- In a separate bowl, whisk eggs with cream and pour over bread/sausage mixture. Stir until well combined and transfer to prepared baking dish.
- Bake 35 minutes, uncovered, until top is browned.
