Instructions
- Preheat oven to 225 degrees F, and line a roasting pan with foil.
- Place the salmon filets on the foil-lined pan and space evenly.
- In a small bowl, combine the olive oil, salt, pepper, lemon juice, finely diced shallots, minced garlic and (optional) sweetener. Whisk to combine.
- Brush the top and bottom of each filet with oil mixture. Top each with equal amounts of fresh herbs, dill and parsley.
- Roast, uncovered, for 30 minutes or until fish is opaque and flakes easily (or internal temp reaches 145 degrees F).
