Instructions

  1. Place the broiler rack 3-4 inches from the heat source and preheat the broiler.
  2. Coat a large broiling pan with cooking spray.
  3. In a large bowl, combine the beef, scallions, egg, coconut milk, 1½ tablespoons soy sauce, cumin, coriander, and red pepper flakes.
  4. Gently form into 1½ inch diameter meatballs and arrange on the prepared pan. Allow for half inch space apart.
  5. Broil (without turning) just until browned on the top, no longer pink inside, and the juices run clear, ~10-15 minutes, or until the meatballs reach an internal temperature of 160 degrees F on a meat thermometer.
  6. Move to a serving dish.
  7. Pour remaining ½ cup coconut milk into the pan and scrape up browned bits, stirring until dissolved.
  8. Season with the remaining ½ tablespoon soy sauce and pour over the meatballs.
