Instructions

  1. Place garlic, basil, lemon juice, olive oil, pepper, salt, and 4 oz of the blue cheese in a blender or food processor, and process until smooth.
  2. Add the yogurt, and then pulse until well mixed.
  3. Stir in the other 4 oz of blue cheese. Do not blend.
  4. To store for later use, parcel out ½ cup units into snack-sized plastic bags, squeezing out any extra air, and then freeze.
  5. When ready to use, take individeual ½ cup units out of the freezer, and thaw for a few minutes in cool water.
