Instructions
- In a small bowl, add the cashews and ½ cup hot water. Soak for at least 10 minutes.
- Meanwhile, using a spiralizer, turn the zucchinis into noodles.
- Add the “zoodles” with the olive oil to a skillet over medium-high heat and cook until tender, about 2-3 minutes. Then, remove from heat.
- Zest the lemon and juice half of it. Add that juice, lemon zest, garlic, white miso paste, nutritional yeast, cashews, water, salt and pepper to a blender to make the sauce.
- Add the sauce to the “zoodles” in the skillet and stir to combine.
- Top with more lemon zest, hemp seeds and crushed red pepper to serve and enjoy!
